My love for cooking comes from my grandmother, Grace, whose culinary heritage stemmed from Calabria, Italy. Growing up in New Jersey, as a young boy, I would spend Sundays by her side as she prepared her “Sunday Gravy.” “Gravy?” Yes, Gravy. Early Italian American immigrant families adopted the familiar term “gravy” since "sauce" lacked a clear cultural translation. I’ve been making this "Sunday Gravy" since I was old enough to peer over the kitchen counter! INGREDIENTS:
2 Tbsp Olive Oil (Corto Preferred)
½ Ea Spanish Onion (finely Diced)
¼ Cup Vodka
1/4 tsp Chili Flake
½ Cup Heavy Cream
2 Tbsp Butter
4 Tbsp Parmesan
1 Ea Gracie’s Gravy Aka Pasta Sauce
PROCEDURE:
1. In a Large Sauté Pan add Olive Oil and heat on medium high.
2. Once Oil is hot adding finely diced onions and chili flakes, allow the onion to become caramelized.
3. Deglaze pan with vodka and once vodka evaporates add the heavy cream.
4. Once the cream starts to boil add Gracie’s Gravy and let simmer and stir on medium heat.
5. Add Butter and Parmesan and stir. Once the butter has melted the sauce is ready.
6. Serve with 1lb of a pasta of your choice (serve with fresh basil and Parmesan).
INGREDIENTS:
1 Tbsp Olive Oil (Corto Preferred)
½ Ea Spanish Onion (finely Diced)
6 oz Guanciale (Bacon Works Also)
½ tsp Chili Flake
½ Cup White Wine
2 Tbsp Olive Oil (Corto Preferred)
1 Ea Gracie’s Gravy Aka Pasta Sauce
PROCEDURE:
1. In a Large Sauté Pan add 1 Tbsp Olive Oil and Bacon, heat on medium high.
2. Once bacon is crispy add finely diced onions and chili flakes, allow the onion to become caramelized.
3. Deglaze pan with White Wine and once White Wine reduced by half add 1 Jar Gracie’s Gravy.
4. Once the Sauce starts to boil turn off heat and finish with 1 Tbsp of olive oil and stir.
5. Serve with 1lb of a pasta of your choice (serve with Parmesan).

½ Ea Spanish Onion (finely Diced))
1 tsp Chili Flake
1 Ea Gracie’s Gravy Aka Pasta Sauce
PROCEDURE:
1. In a Large Sauté Pan add 2 Tbsp Olive Oil, heat on medium high.
2. Once Oil is hot add finely diced onions and chili flakes, allow the onion to become caramelized.
3. Once Onions are caramelized add 1 Jar Gracie’s Gravy.
4. Once the Sauce starts to boil turn off heat and finish with 1 Tbsp of olive oil and stir.
5. Serve with 1lb of a pasta of your choice (served with parmesan).
INGREDIENTS:
2 Tbsp Olive Oil (Corto Preferred)
1 Ea Spanish Onion (finely Diced)
1 Ea Celery Stalk (finely Diced)
1 Ea Medium Carrot (Finely Diced
6 oz Bacon Diced
1 LB Ground Beef (20% Fat)
2 Ea Bay leaf
1 Cup Red Wine
2 Cup Chicken Stock
½ Cup Heavy Cream
1 Ea Gracie’s Gravy Aka Pasta Sauce
TT Salt & Pepper
PROCEDURE:
1. In a Medium Dutch Oven add 2 Tbsp Olive Oil and Bacon, heat on medium high
2. Once bacon is crispy add finely diced onions, celery, carrots, bay leaf allow the onion, celery, carrots to become caramelized.
3. Add Ground Beef (break up by stirring) and cook until beef is cooked through season lightly with S&P.
4. Deglaze pan with White Wine and once Red Wine reduced by half and add chicken stock and 1 Jar Gracie’s Gravy. Turn heat to medium.
5. Once the Sauce starts to simmer add heavy cream and cook for 10-15 minutes.
6. Season to your liking with S&P.
7. Serve with 1lb of a pasta of your choice (Garnish with Parsley and Parmesan)
